Today's activity is: Marshmallow Fudge (for teacher gifts) which Daddy chef helped with.
You will need:
- 200g Marshmallows
-100g butter
- vanilla extract (or you could do a peppermint version with peppermint extract)
- 1lb Icing sugar
- 2 tbls milk
Sift the icing sugar into a bowl.
Put the marshmallows, butter, milk and vnilla into a saucepan.
Heat gently stirring constantly until everything is melted and mixed.
Pour the mixture in with the icing sugar and mix.
Once it has formed a dough like mixture, knead it to give it a smooth consistancy.
Press into a straight edged pan (that has been dusted with icing sugar to prevent sticking).
You can make everything really flat and even by using a glass to roll it (works better than rolling pin because it can get right up to the edges)
Put into the fridge to set for several hours.
Once set, use a knife to cut into cubes, sprinkle with more icing sugar and package as you wish.
(they must be eaten in about 1 week).

We have used some left over party bags from Alexandra's birthday party (just picking out the green and red ones). Labels were made from some gold mirror card and a strip of Christmas wrapping. I stamped out "Handmade by Alexandra and Daddy" on some white card and stuck this to the centre of the wrapping paper peice. On the back of the labels I wrote:
SNOWMAN FUDGE
Ingredients
- Marshmallows
- Icing Sugar
- Butter
- Milk
- Vanilla Extract
Each bag has the teacher's name written on with a gold marker, then the top had been double folded, hole punched and a silver curling ribbon has been threaded through the holes and tied, and the tag attached. All prettied up ready to take into school tomorrow morning, along with her Santa handprint cards.
Hopefully another batch of fudge will be created for family for Christmas.
